Brookhaven’s Eggplant Dip

INGREDIENTS

  • 1 Large Eggplant

  • 2 Cloves Garlic

  • 3 Tablespoons Tahini

  • 3 Tablespoons Lemon Juice

  • 2 Tablespoons Kefi Life Extra Virgin Olive Oil

  • 1 Teaspoon Salt

  • 1/2 Teaspoon Ground Cumin

DIRECTIONS

  1. Preheat the oven to 400°F (200°C).

  2. Pierce 1 Large Eggplant with a fork multiple times and place it on a baking sheet. Roast for 30 minutes until the skin is wrinkled and the flesh is soft.

  3. Remove the eggplant from the oven and let it cool slightly.

  4. Cut the eggplant in half and scoop out the flesh into a bowl, discarding the skin.

  5. In a food processor, combine the eggplant flesh, 2 Cloves Garlic, 3 Tablespoons Tahini, 3 Tablespoons Lemon Juice, 2 Tablespoons Olive Oil, 1 Teaspoon Salt, and 1/2 Teaspoon Ground Cumin. Blend until smooth.

  6. Adjust seasoning to taste, and serve garnished with chopped parsley if desired.
