Cauliflower Cheesesteak

INGREDIENTS

  • 1 head of cauliflower

  • grated cheese (she recommends cheddar, but we used mozzarella!)

  • chopped scallions

  • salt & pepper

  • Kefi L!fe EVOO

DIRECTIONS

  • Slice a head of cauliflower into 3/4 inch “steaks”

  • Roast the steaks on an oiled sheet pan at 375·F for 15 minutes per side (until fork tender and golden)

  • Top each steak with 3 tbsp. grated cheese & 2 tbsp. chopped scallions, plus salt & pepper

  • Roast for 3 more minutes or until cheese has melted!
