Cauliflower Cheesesteak
INGREDIENTS
- 1 head of cauliflower 
- grated cheese (she recommends cheddar, but we used mozzarella!) 
- chopped scallions 
- salt & pepper 
- Kefi L!fe EVOO 
DIRECTIONS
- Slice a head of cauliflower into 3/4 inch “steaks” 
- Roast the steaks on an oiled sheet pan at 375·F for 15 minutes per side (until fork tender and golden) 
- Top each steak with 3 tbsp. grated cheese & 2 tbsp. chopped scallions, plus salt & pepper 
- Roast for 3 more minutes or until cheese has melted!
