Cauliflower Cheesesteak
INGREDIENTS
1 head of cauliflower
grated cheese (she recommends cheddar, but we used mozzarella!)
chopped scallions
salt & pepper
Kefi L!fe EVOO
DIRECTIONS
Slice a head of cauliflower into 3/4 inch “steaks”
Roast the steaks on an oiled sheet pan at 375·F for 15 minutes per side (until fork tender and golden)
Top each steak with 3 tbsp. grated cheese & 2 tbsp. chopped scallions, plus salt & pepper
Roast for 3 more minutes or until cheese has melted!
