Marilyn’s Kefi Bread
INGREDIENTS
2 cups warm water
1 1/2 teaspoon instant yeast
2 tablespoons honey
5 cups flour
2 teaspoons of sea salt
2 tablespoons Kefi Life EVOO
DIRECTIONS
Mix water with instant yeast and favorite honey and let bloom for 10 minutes
Following bloom, add half the flour, sea salt, and EVOO and mix until blended
Start adding another cup of flour and knead with your hands
When it gets stiff enough to pick up add flour until it’s still sticky but NOT DRY. BEST TRICK IS TO USE OLIVE OIL ON YOUR HANDS TO WORK WITH THE DOUGH!
Cover in a bowl in a warm oven. (I turn mine on for 5 min before I start mixing ingredients.)
Cover and wait for 1 hr.
Punch down again and let it have a 2nd rise!
Keep in warm area for the 2nd rise. You may just sit on warm counter for 2nd rise.
Turn oven on to 420 with a Dutch oven heating. Make sure it’s really hot and place parchment paper and drop in bread dough. (I like pulling the dough to make a little design on top.)
Cover and bake for 20 min with lid on and after 20 min
Remove lid and bake for another 12 min!
After you remove, let it cool for 5 min, drizzle olive over top and sea salt
MARILYN’S NOTES:
The bottom should not be any darker than the top
Parchment paper is a must.. you use 2 sheets. It helps to keep it from burning!
You can also add shredded cheese to the 2nd rise. I lg package of sharp cheddar. Knead into 2nd rise!
You can also change out the sea salt for everything bagel seasoning!
