Paximathakia
INGREDIENTS
- 4 1/2 cup flour 
- 1 tbsp. baking powder 
- 1/2 cup almonds (chopped) 
- 1/2 cup coconut (chopped) 
- 1 tbsp. anise seeds 
- 1 cup Kefi Life® EVOO 
- 1/2 stick butter 
- 1 1/3 cup sugar 
- 2 tbsp. brandy 
- 1 cup orange juice 
- 1 tsp. baking soda 
DIRECTIONS
- Pre-heat oven to 350°F 
- Mix together flour, baking powder, almonds, coconut, and anise seeds and set aside 
- Add EVOO, butter, sugar, and brandy into mixer and beat together well 
- In a separate glass, add orange juice and baking soda. Once baking soda dissolves, empty quickly into the mixer and continue to mix for 1 minute 
- Slowly add in dry ingredients. If dough is sticky, you can add more flour 
- Divide the dough in half. 
- From half the dough, form 5 like small rolls about an inch in diameter and as long as the length of the cookie sheet 
- With a chef's knife, score the rolls diagonally, half an inch apart. 
- Bake them at 350° for about 20 minutes. 
- Remove from oven and cut cookies where you had them scored 
- Turn them on their side on cookie sheet and bake at 300° for 15 minutes 
- Repeat with the other half of the dough
