Koulourakia Cookies

INGREDIENTS

  • 4 sticks Land o Lakes unsalted butter (room temperature or soft)

  • 2 6oz. glasses of sugar

  • 14 egg yolks

  • 1 glass luke warm whole milk

  • 2 Tbsp Vanilla extract (liquid, to help cookie batter rise)

  • ½ tsp Kronos Vanilla flavoring powder

  • 8 cups Five Roses Flour (or Pillsbury, do not use self-rise)

  • 7 tsp baking powder (add to flour)

DIRECTIONS

  • Pour sugar and soft butter into blender and mix for about 15-20 minutes until batter smooth.

  • Add yolks, vanilla extract and vanillin powder to batter and continue to mix for about another 15 minutes.

  • Add in room temperature milk.

  • Mix everything together.

  •  In a separate bowl -manually mix with a spoon the flour and baking powder for about 5 minutes.

  •  Slowly add flour mix to the batter and blend all together creating the complete Koulouria batter. 

  • Mix until unified as one batter.

  •  Pinch off a small ball of the dough (approx. 1 inch/3cm in diameter) and roll it into a rope.

  • You can then try to:

    • Twist it into “braids”

    • Fold them in 3 to form little boats.

    • Shape into an S

    • Or just let your imagination run wild and form the dough in any shape you like!

  • Prepare 3 egg yolks into a cup and stir..you will use this to brush tiny bit of egg yolk on each cookie top for a glaze before placing tray in oven to bake.

  •  Bake for about 12-15 minutes at 400 degrees until fluffy and golden brown on top.
