Brookhaven’s String Bean Salad

INGREDIENTS

  • 1 Pound String Beans

  • 2 Tablespoons Kefi Life Extra Virgin Olive Oil

  • 1 Lemon

  • 1 Teaspoon Dijon Mustard

  • Salt

  • Black Pepper

  • 1/4 Cup Sliced Red Onions

  • 1/4 Cup Cherry Tomatoes

  • 1/4 Cup Toasted Almond Slices

DIRECTIONS

  1. Trim 1 Pound of String Beans and cut them into 2-inch pieces.

  2. Bring a pot of salted water to a boil, and blanch the string beans for 3 minutes until tender-crisp.

  3. Immediately transfer the blanched beans to an ice water bath to stop the cooking process, then drain and pat dry.

  4. In a small bowl, whisk together 2 Tablespoons of Olive Oil, the juice of 1 Lemon, 1 Teaspoon of Dijon Mustard, Salt to taste, and Black Pepper to taste for the dressing.

  5. Toss the string beans in a large bowl with the dressing until evenly coated.

  6. Add 1/4 Cup of Sliced Red Onions, 1/4 Cup of Cherry Tomatoes halved, and 1/4 Cup of Toasted Almond Slices. Mix well.

  7. Adjust seasoning if necessary and serve immediately.
