Kiki’s Kefi Tomato & Chickpea Soup
INGREDIENTS
1 big sweet onion cut and sautéed
4 cans of chickpeas
16 oz peeled tomatoes
water
1/4 cup Kefi Life extra virgin olive oil
2 bay leaves
salt and pepper
DIRECTIONS
Cut onion and sauté in olive oil
add bay leaf
when onion is golden yellow, add peeled tomatoes, chickpeas, and water.
Bring to boil and simmer until tender.
Season with salt and pepper.
