INGREDIENTS
1/2 cabbage (cored and coarsely chopped)
2 yellow onions (diced)
1 Red pepper (diced)
1 carrot (diced)
2 tomatoes (diced)
1 bunch Cilantro - save the stems (chopped)
Juice of 2 lemons
1 container of mushrooms (diced)
Parsnip (diced)
1/2 head of Garlic (minced)
3 tbsp of Kefi Life® EVOO
DIRECTIONS
In a large pot, sauté onion & tomato with 3 tbsp of Kefi Life® EVOO
When onion changes color, add the cabbage and 3 liters of water
Stir in the rest of the veggies one at a time
Add diced cilantro stem (not leaves)
Simmer for 20 min
Turn off heat and add salt, pepper, lemon juice & cilantro leaves
Cover and let soup sit for 20 min to cool down
If you like it hot, add paprika to taste
