Thea Nancy’s Chili
This recipe comes to us from our Digital Director, Morgan’s, Great-Aunt Nancy and is a family favorite to make together when getting together in the fall or winter to watch football!
INGREDIENTS
- 3 tbsp Kefi Life® EVOO 
- 1 lg. onion, diced 
- 3 cloves garlic, minced 
- 2 lbs. ground beef or turkey 
- 2 bell peppers, chopped (1 red, 1 yellow) 
- 1 can (20 oz.) diced tomatoes 
- 4 tbsp chili powder 
- 1 tsp salt 
- 1 bay leaf 
- 1/4 tsp basil 
- 2 cans (1 lb. 4 oz. each) kidney beans, drained 
DIRECTIONS
- sauté onion & garlic in EVOO 
- add meat to pan & cook til brown 
- add remaining ingredients (aside from kidney beans) 
- cover & let simmer for 1 hour, stirring occasionally 
- add beans & cook for 15 minutes, uncovered 
- serve with chopped onion, jalapeño, shredded cheese, sour cream (or greek yogurt), and corn or tortilla chips!
