Gemista Stuffed Veggies

INGREDIENTS

  • 4 Beefsteak Tomatoes

  • 3 Green Peppers

  • 2 Red Peppers

  • 1 White Onion

  • 1-2 white Potato

  • 4 Cloves of Garlic

  • 1 Handful of Parsley

  • 1 Zucchini

  • 1 Tsp salt

  • 1 pound of 93% Hamburger

  • 1 ½ Cup of Rice (four handfuls)

  • ¾ Cup of Extra Virgin Olive Oil

  • 1 Cup of Water

  • 1 small can Tomato sauce

DIRECTIONS

  • Wash all vegetables

  • Clean out peppers

  • Empty out tomatoes and set the inside contents to side for later (nothing is wasted)

  • Cut the top of the zucchini – clean out by circling the knife to scoop out empty insides (set to the side the shavings) peel the zucchini in stripes

  • Chop onion (Grating onion will steal some of the flavor)

  • Rough cut/chop the cloves of garlic

  • Grate one of the green peppers  

  • Chop the parsley

  • Slice the potato into chunks

  • Sautee the EVOO, grated pepper, chopped onion, and garlic in a pot (green pepper enhances taste to sauté)

  • Stir mix with a wooden spoon

  • Add hamburger to sauté- stir entire mix together then slowly add the excess green pepper and tomato insides plus the zucchini shavings, tomato sauce, and salt all to the mix- continue to sauté

  • Now add 4 handfuls of rice with water – continue to sauté on low to medium heat -add parsley slowly stir until golden brown – Thick consistency

  • You will begin to experience the aroma of home cooking

  • Place the whole tomato, zucchini red and green peppers onto a pan (organize vegetables in your own creative way)

  • Insert or stand a sliced potato in between each vegetable to help keep it all of them upright

  • Begin to evenly scoop the sauté mix into each vegetable

  • Drizzle KL evoo over the stuffed vegetables

  • Cover your creation with foil

  • Bake at 350 for one hour then after one hour remove foil and continue to bake for 30 additional minutes.
