Salt & Pepper to taste
DIRECTIONS
Rinse & slice Chinese eggplants lengthwise
Preheat oven to 450 degrees Fahrenheit
Lay eggplant slices on baking sheet
Drizzle with Kefi Life EVOO and add salt and pepper to taste
Roast for about 45 minutes or until desired tender/crispiness
