Yianna’s Ouzo Shrimp

This recipe comes from Yianna Papadeas’ Mom Pallis.

INGREDIENTS

  • 12 1b uncooked Shrimp Shelled trinised)

  • ½ cups Kefi Life Extra Virgin Olive Oil

  • ¾ cup chopped dry onion

  • 1 bunch of green onion, chopped

  • 2 cloves garlic, chopped

  • 1 cup dry white wine

  • 2 cans (14.5 oz) Italian stewed tomatoes

  • ½ tsp sugar

  • ½ cup chopped parsley

  • 3 tsp oregano

  • basil or bay leaf

  • salt & pepper to taste

  • ½ tsp anise seed - grind up in hand, add to taste

  • 6 oz feta (or to taste)

DIRECTIONS

  1. Heat oil in large skillet. Sauté onions, green onion & garlic until golden.

  2. Add tomatoes, wine, sugar, parsiey, oregano, salt & pepper to taste, and Basil or Bay leaf & Anise

  3. Simmer gently until thick.

  4. Remove Shells of Prawns & rinse

  5. Add prawns to tomato sauce just before serving

  6. Cook until prawns are firm & pink, about 5 min.

  7. Remove Skillet from heat.

  8. Stir in Feta and add seasonings if needed.

  9. Enjoy!
