Yianna’s Ouzo Shrimp
This recipe comes from Yianna Papadeas’ Mom Pallis.
INGREDIENTS
12 1b uncooked Shrimp Shelled trinised)
½ cups Kefi Life Extra Virgin Olive Oil
¾ cup chopped dry onion
1 bunch of green onion, chopped
2 cloves garlic, chopped
1 cup dry white wine
2 cans (14.5 oz) Italian stewed tomatoes
½ tsp sugar
½ cup chopped parsley
3 tsp oregano
basil or bay leaf
salt & pepper to taste
½ tsp anise seed - grind up in hand, add to taste
6 oz feta (or to taste)
DIRECTIONS
Heat oil in large skillet. Sauté onions, green onion & garlic until golden.
Add tomatoes, wine, sugar, parsiey, oregano, salt & pepper to taste, and Basil or Bay leaf & Anise
Simmer gently until thick.
Remove Shells of Prawns & rinse
Add prawns to tomato sauce just before serving
Cook until prawns are firm & pink, about 5 min.
Remove Skillet from heat.
Stir in Feta and add seasonings if needed.
